As a Sushi Cook at Brentwood Bay Resort, you are trusted with crafting dishes that demand precision, skill, and artistry. This is a highly independent role where you take ownership of your station, ingredients, and execution — ensuring every plate reflects the quality and care we’re known for. A day in the life
- Independently prepare high-quality sushi, sashimi, and Japanese-inspired dishes with accuracy and finesse
- Manage your mise en place, including rice preparation, knife work, fish breakdown, and garnishes
- Follow recipes and plating standards to ensure consistent, visually stunning presentation
- Maintain your station with strong attention to cleanliness, organization, and food safety
- Monitor ingredient freshness, manage inventory, and minimize waste
- Collaborate with the broader kitchen team to ensure smooth service flow and guest satisfaction
- Complete opening, closing, and shift duties with consistency and a high standard of care
What we hope you'll bring to the team
- Minimum of 2 years’ experience in a sushi kitchen or high-paced culinary setting with a focus on Japanese cuisine
- Exceptional knife skills and a strong foundation in traditional sushi preparation techniques
- Confidence working independently, with high standards for quality and precision
- Strong time management, calm focus under pressure, and attention to detail
- A team-oriented attitude with a willingness to support others when needed
- Reliable transportation to and from Brentwood Bay Resort
